Stuffed Shells
Ingredients:
- One Box Large Shells (Cooked according to directions)
- 1 lb. Italian Sausage (Casings removed)
- 1 large onion – chopped
- 1 pkg cream cheese (softened)
- 1 box frozen spinach (thawed and drained)
- 1 egg – beaten
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese (split into 2 portions)
- 1 cup cottage cheese
- 1/4 grated parmesan cheese
- Salt and pepper to taste
- 2 jars of sauce, or follow the recipe below for making your own.
Directions:
- Brown sausage and onion, transfer to a large mixing bowl.
- Stir in remaining ingredients (using half the mozzarella) and mix thoroughly.
- Place a little sauce on the bottom of a large baking pan. Begin stuffing the shells with the mixture, and arrange in the pan.
- Pour the remaining sauce over the shells.
- Bake at 350 for 40 minutes covered.
- Remove the cover and sprinkle the remaining mozzarella and bake another 5 minutes to melt.
Sauce
- 29 oz. can tomato sauce (Also use an extra 8 oz can if you like the shells saucy)
- 1 tbsp dried onion
- 2 tsp dried basil
- 2 tsp dried parsley
- 1 tbsp minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
Mix all ingredients.
