Stuffed Shells

Ingredients:

  • One Box Large Shells (Cooked according to directions)
  • 1 lb. Italian Sausage (Casings removed)
  • 1 large onion – chopped
  • 1 pkg cream cheese (softened)
  • 1 box frozen spinach (thawed and drained)
  • 1 egg – beaten
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese (split into 2 portions)
  • 1 cup cottage cheese
  • 1/4 grated parmesan cheese
  • Salt and pepper to taste
  • 2 jars of sauce, or follow the recipe below for making your own.

Directions:

  1. Brown sausage and onion, transfer to a large mixing bowl. 
  2. Stir in remaining ingredients (using half the mozzarella) and mix thoroughly. 
  3. Place a little sauce on the bottom of a large baking pan. Begin stuffing the shells with the mixture, and arrange in the pan. 
  4. Pour the remaining sauce over the shells. 
  5. Bake at 350 for 40 minutes covered. 
  6. Remove the cover and sprinkle the remaining mozzarella and bake another 5 minutes to melt.

Sauce

  • 29 oz. can tomato sauce (Also use an extra 8 oz can if you like the shells saucy)
  • 1 tbsp dried onion
  • 2 tsp dried basil
  • 2 tsp dried parsley
  • 1 tbsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper

Mix all ingredients.
